Having a hard time facing winter? Want to cook something to help you fight off the cold? Or are you lucky enough to be in a part of the world where it’s still summer? Either way, our friends at the Walk-In Cookbook in Brooklyn have put together two simple recipes to warm your heart.
First up is their vegan chili: It takes less than 10 minutes to prepare, just 20 minutes to cook, and is seriously delicious!

Ingredients (for 2 servings):
15 oz Black Beans
15 oz Corn
14.5 oz Peeled Tomatoes
10 oz Chickpeas
8 fl oz Vegetable Stock
1 Onion
1 Red Pepper
1 Sweet Potato
1 Garlic Clove
1 Avocado
1 Scallion
3 tbs Chili Powder
2 tbs Olive Oil
1 tbs Salt
1 tbs Pepper
1. Mince garlic and slice onion, red pepper, and sweet potato.
2. Heat olive oil in a saucepan on medium heat. Add the garlic, onion, and pepper and sauté for about 4 minutes (until translucent).
3. Add the chili powder and sauté one minute to release flavors. Add the sweet potato and sauté for another 2 minutes.
4. Drain all the cans before adding the black beans, chickpeas, and corn.
5. Add the canned tomatoes, including all the juice. Add vegetable stock and simmer for about 20-25 minutes on medium heat until thickened. Taste for seasoning with salt and pepper. Garnish with avocado slices, and enjoy!
Craving wild-caught fish? Take 30 minutes and make yourself this delicate hake with winter vegetables!

Ingredients (for 2 servings):
12 oz Wild-caught Hake Fillet
4 oz Kale
½ Onion
½ Red Pepper
1 Potato
1 Leek
2 Garlic Cloves
2 tbs Olive Oil
1 tbs Balsamic Vinegar
1 tbs Salt
1 tbs Pepper
1. Mince garlic and dice onion. Slice leek and cut kale and pepper into strips. Peel and cut potato in half.
2. Heat two tablespoons of olive oil in a saucepan on medium heat. Add the garlic, onion, leek, and red pepper and sauté for about 6 minutes (until soft and tender).
3. Add potato and kale and sauté for another 2-3 minutes (until kale is softened and wilted).
4. Add 3/4 cup water and continue to cook 10-15 minutes on medium heat until potato is softened. Season with salt and pepper as desired.
5. Lay the hake fillet over the braising vegetables and cover with lid to let the hake cook. Let it simmer for about 6-7 minutes on medium heat. Serve hake and vegetables on a plate and drizzle with a little olive oil and balsamic vinegar.
